Description

A moist and flavorful bread combining zucchini, raspberries, and white chocolate.


Ingredients

  • 1 cup grated zucchini
  • 1 cup fresh raspberries
  • 1/2 cup white chocolate chips
  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the grated zucchini, eggs, oil, and vanilla.
  3. In another bowl, combine flour, sugars, baking soda, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture.
  5. Fold in raspberries and white chocolate chips.
  6. Pour the batter into a greased loaf pan.
  7. Bake for 60 minutes or until a toothpick comes out clean.
  8. Let it cool before slicing.

Notes

  • Store leftovers in an airtight container.
  • Can substitute zucchini with yellow squash.
  • Try adding nuts for extra crunch.
