Ingredients

- 1 cup grated zucchini
- 1 cup fresh raspberries
- 1/2 cup white chocolate chips
- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the grated zucchini, eggs, oil, and vanilla.
- In another bowl, combine flour, sugars, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture.
- Fold in raspberries and white chocolate chips.
- Pour the batter into a greased loaf pan.
- Bake for 60 minutes or until a toothpick comes out clean.
- Let it cool before slicing.
Notes
- Store leftovers in an airtight container.
- Can substitute zucchini with yellow squash.
- Try adding nuts for extra crunch.
