Description
Delicious raspberry sweet rolls with a creamy frosting.

- For the Dough
- 2 packages yeast (4½ teaspoons) dissolved in 1 cup lukewarm water
- 6 tablespoons unsalted butter, softened
- 1 cup granulated sugar
- 9 cups unbleached all-purpose flour
- 2 cups hot water
- 2 eggs, beaten
- 1 tablespoon salt
- For the Filling
- 1/2 cup softened butter
- 1/2 cup light brown sugar
- 3½ cups raspberries
- 1/3 cup granulated sugar
- Zest of 1 large lemon
- 1½ teaspoons cornstarch
- For the Frosting
- 4 ounces cream cheese, room temperature
- 1/4 cup unsalted butter, room temperature
- 1 cup powdered sugar
- 1 teaspoon lemon zest
Instructions
- Dissolve yeast in lukewarm water and set aside for 5 minutes.
- In a stand mixer bowl, combine butter, sugar, and salt with hot water. Beat for 30 seconds and allow to cool to lukewarm.
- Mix in 2 cups of flour until smooth. Add yeast mixture and beaten eggs; mix well.
- Gradually add remaining flour and knead with a dough hook for about 2 minutes. Transfer to a floured surface and knead by hand until smooth and satiny.
- Place dough in a greased bowl, cover, and let rise for 30 minutes or until doubled.
- Divide dough in half. Roll one half into a rectangle. Spread with 4 tablespoons softened butter and sprinkle with 1/4 cup brown sugar.
- In a bowl, gently mix raspberries, granulated sugar, lemon zest, and cornstarch. Spread half over the dough.
- Roll tightly into a log and slice into 2-inch rolls using thread or floss. Place into a greased 9×13-inch pan.
- Repeat with the second half of the dough and remaining filling.
- Cover and let rolls rise in a warm place for about 1 hour until doubled.
- Bake at 350°F for 25–32 minutes until golden brown and cooked through. Cool on a wire rack.
- For the frosting, beat cream cheese, butter, powdered sugar, and lemon zest until smooth. Spread over warm rolls before serving.
Notes
- Butter is used in place of shortening for better flavor.
- Rolls should be soft inside but fully baked before removing from the oven.
- Best served warm.
