Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup protein powder
  • 1/4 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/2 cup rolled oats
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup chocolate chips (optional)

Instructions

  1. In a large bowl, combine pumpkin puree, protein powder, almond butter, and honey or maple syrup.
  2. Add rolled oats, cinnamon, and nutmeg to the mixture and stir until well combined.
  3. If desired, fold in chocolate chips.
  4. Using your hands, form the mixture into small balls, about 1 inch in diameter.
  5. Place the balls on a baking sheet lined with parchment paper.
  6. Refrigerate for at least 30 minutes to firm up.
  7. Store in an airtight container in the refrigerator for up to a week.
