Description

Delicious pumpkin cranberry swirl muffins topped with a crunchy streusel.


Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup fresh cranberries
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup chopped nuts (optional)
  • 1/4 cup rolled oats for streusel
  • 1/4 cup melted butter for streusel
  • 1/4 cup brown sugar for streusel

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix pumpkin puree, sugar, and brown sugar.
  3. Add eggs and vegetable oil, mixing well.
  4. In another bowl, combine flour, baking soda, baking powder, salt, and spices.
  5. Gradually add dry ingredients to wet ingredients until just combined.
  6. Fold in cranberries and nuts if using.
  7. Spoon batter into muffin tins lined with paper liners.
  8. In a small bowl, mix oats, melted butter, and brown sugar for streusel topping.
  9. Sprinkle streusel over muffin batter.
  10. Bake for 20-25 minutes or until a toothpick comes out clean.
  11. Let cool before serving.

Notes

  • Store leftovers in an airtight container.
  • Can substitute dried cranberries if fresh are unavailable.
