Delicious pumpkin cranberry swirl bread topped with maple glaze.
Ingredients

- 2 cups all-purpose flour
- 1 cup pumpkin puree
- 1 cup fresh cranberries
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1/2 cup vegetable oil
- 3 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 cup maple syrup
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, mix pumpkin puree, sugars, oil, eggs, and vanilla until smooth.
- Gradually add the dry ingredients to the wet ingredients.
- Gently fold in the cranberries.
- Pour the batter into a greased loaf pan.
- Swirl in maple syrup with a knife.
- Bake for 60 minutes or until a toothpick comes out clean.
- Let it cool before glazing.
Notes
- Store bread in an airtight container.
- Best served warm.
- Can substitute cranberries with raisins.
