Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups vegetable broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Optional toppings: sour cream, shredded cheese, cilantro

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion, garlic, and bell pepper; sauté until softened.
  3. Stir in pumpkin puree, black beans, kidney beans, diced tomatoes, and vegetable broth.
  4. Add chili powder, cumin, smoked paprika, salt, and pepper; mix well.
  5. Bring to a boil, then reduce heat and simmer for 30 minutes, stirring occasionally.
  6. Serve hot with optional toppings if desired.
