- 1 bell pepper, chopped
- 1 can (15 oz) pumpkin puree
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 2 cups vegetable broth
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Optional toppings: sour cream, shredded cheese, cilantro
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion, garlic, and bell pepper; sauté until softened.
- Stir in pumpkin puree, black beans, kidney beans, diced tomatoes, and vegetable broth.
- Add chili powder, cumin, smoked paprika, salt, and pepper; mix well.
- Bring to a boil, then reduce heat and simmer for 30 minutes, stirring occasionally.
- Serve hot with optional toppings if desired.
