Ingredients

  • 12 oz pasta (penne or rigatoni)
  • 8 oz Boursin cheese
  • 1 cup cherry tomatoes, halved
  • 1 cup zucchini, diced
  • 1 cup bell peppers, diced
  • 1 cup spinach
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the pasta according to package instructions until al dente, then drain.
  3. In a large bowl, combine the cooked pasta, Boursin cheese, cherry tomatoes, zucchini, bell peppers, spinach, garlic, olive oil, salt, and pepper.
  4. Transfer the mixture to a baking dish and sprinkle with Parmesan cheese.
  5. Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
