Description
Pollo Asado is a flavorful grilled chicken dish marinated in citrus and spices.
Ingredients

- 5 pounds bone-in skin-on chicken thighs
- 1/2 cup fresh squeezed orange juice
- 1/4 cup fresh lime juice
- 1 small onion
- 1 jalapeno, stem removed and seeded
- 1/2 cup fresh cilantro
- 2 ounces achiote paste
- 1 tablespoon ground coriander
- 1 tablespoon ground cumin
- 1 tablespoon kosher salt
- 1 1/2 teaspoons smoked paprika
- 1 teaspoon Mexican oregano
- 1 teaspoon ancho chili powder
Instructions
- Place the chicken in a large zip top bag and set aside.
- Add the remaining ingredients to the bowl of a food processor or blender and puree until almost smooth.
- Pour the marinade over the chicken and marinate in the refrigerator for 4-24 hours.
- Remove the chicken from the refrigerator and allow to come to room temperature for 30 minutes.
- Heat the grill to 425-450˚F.
- Grill the chicken, skin side down, for 5-7 minutes.
- Flip the chicken and continue grilling for an additional 7-10 minutes or until an internal temperature reaches 165˚F.
- Transfer the chicken to a platter and allow to rest for 10 minutes.
Notes
- Pollo Asado can be baked in the oven on a baking sheet lined with foil at 400˚F for 25-30 minutes or until the temperature reaches 165˚F.
