Description

Pollo Asado is a flavorful grilled chicken dish marinated in citrus and spices.


Ingredients

  • 5 pounds bone-in skin-on chicken thighs
  • 1/2 cup fresh squeezed orange juice
  • 1/4 cup fresh lime juice
  • 1 small onion
  • 1 jalapeno, stem removed and seeded
  • 1/2 cup fresh cilantro
  • 2 ounces achiote paste
  • 1 tablespoon ground coriander
  • 1 tablespoon ground cumin
  • 1 tablespoon kosher salt
  • 1 1/2 teaspoons smoked paprika
  • 1 teaspoon Mexican oregano
  • 1 teaspoon ancho chili powder

Instructions

  1. Place the chicken in a large zip top bag and set aside.
  2. Add the remaining ingredients to the bowl of a food processor or blender and puree until almost smooth.
  3. Pour the marinade over the chicken and marinate in the refrigerator for 4-24 hours.
  4. Remove the chicken from the refrigerator and allow to come to room temperature for 30 minutes.
  5. Heat the grill to 425-450˚F.
  6. Grill the chicken, skin side down, for 5-7 minutes.
  7. Flip the chicken and continue grilling for an additional 7-10 minutes or until an internal temperature reaches 165˚F.
  8. Transfer the chicken to a platter and allow to rest for 10 minutes.

Notes

  • Pollo Asado can be baked in the oven on a baking sheet lined with foil at 400˚F for 25-30 minutes or until the temperature reaches 165˚F.
