A freshly baked loaf of Pineapple Quick Bread, golden brown and packed with tropical flavor. Perfectly moist, sweet, and easy to make at home!
Ingredients
2 cups all-purpose flour
1 cup granulated sugar
1 tsp baking soda
½ tsp salt
2 large eggs
½ cup vegetable oil
1 tsp vanilla extract
1 can (8 oz) crushed pineapple, undrained
½ cup chopped nuts (optional)
Instructions
Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
Mix dry ingredients: In a bowl, whisk together flour, sugar, baking soda, and salt.
Combine wet ingredients: In another bowl, beat eggs, then add oil, vanilla, and crushed pineapple (with juice).
Mix it all together: Gradually add dry ingredients to the wet mixture. Stir until just combined. Fold in nuts if using.
Bake: Pour the batter into the prepared loaf pan. Bake for 50-60 minutes or until a toothpick comes out clean.
Cool & serve: Let cool in the pan for 10 minutes, then transfer to a wire rack. Slice and enjoy!
