Instructions

  1. Preheat oven to 350°F and grease a 9×13 pan.
  2. Microwave butter, cocoa powder, and sugar in 1-minute intervals, stirring until smooth.
  3. Transfer to a bowl, then mix in salt, vanilla, and eggs one at a time.
  4. Stir in flour until just combined.
  5. Spread evenly in the pan and bake 30–35 minutes.
  6. Cool completely before frosting.
  7. Beat butter, powdered sugar, mint extract, and 2 tbsp cream until smooth.
  8. Add more cream if needed for a thick, spreadable frosting.
  9. Add food coloring if desired.
  10. Spread evenly over cooled brownies.
  11. Melt chocolate chips and butter together until smooth.
  12. Stir in mint extract if using.
  13. Drizzle over frosting, then spread evenly.
  14. Let set completely before cutting.
