These Perfect Chicken Satay Skewers are marinated and grilled to perfection, served with a delicious peanut sauce.
Ingredients

- 1 lb chicken breast, cut into strips
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 1 tbsp curry powder
- 2 tbsp vegetable oil
- 1/4 cup peanut butter
- 1/4 cup coconut milk
- 1 tbsp lime juice
- 1 tbsp chopped cilantro
- Skewers (soaked in water if wooden)
Instructions
- In a bowl, combine soy sauce, brown sugar, curry powder, and vegetable oil.
- Add the chicken strips and marinate for at least 30 minutes.
- Thread the marinated chicken onto skewers.
- Grill the skewers over medium heat for about 10-12 minutes, turning occasionally.
- In a separate bowl, mix peanut butter, coconut milk, lime juice, and cilantro to make the sauce.
- Serve the skewers hot with peanut sauce on the side.
Notes
- Adjust spice level by adding chili paste to the sauce.
- Use bell peppers or onions on the skewers for added flavor.
- Can be served with rice or salad.
