Description

These Perfect Chicken Satay Skewers are marinated and grilled to perfection, served with a delicious peanut sauce.


Ingredients

  • 1 lb chicken breast, cut into strips
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp curry powder
  • 2 tbsp vegetable oil
  • 1/4 cup peanut butter
  • 1/4 cup coconut milk
  • 1 tbsp lime juice
  • 1 tbsp chopped cilantro
  • Skewers (soaked in water if wooden)

Instructions

  1. In a bowl, combine soy sauce, brown sugar, curry powder, and vegetable oil.
  2. Add the chicken strips and marinate for at least 30 minutes.
  3. Thread the marinated chicken onto skewers.
  4. Grill the skewers over medium heat for about 10-12 minutes, turning occasionally.
  5. In a separate bowl, mix peanut butter, coconut milk, lime juice, and cilantro to make the sauce.
  6. Serve the skewers hot with peanut sauce on the side.
