Description

Ingredients

  • For Apple Pie Filling:
  • 3 apples (≈450 g), peeled and sliced into 8 slices each
  • 1530 ml lemon juice (12 tablespoons)
  • 3 tablespoons (≈38 g) white sugar
  • 3 tablespoons (≈38 g) brown sugar
  • 3 tablespoons (≈24 g) cornstarch
  • ½ teaspoon cinnamon
  • Dash of nutmeg
  • 180 ml water
  • For Pie Crust:
  • 225 g unsalted butter, chilled and cubed
  • 315 g all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 60 ml ice water (may need a little more if dough is crumbly)
  • Or: 1 package refrigerated pie crust (2 crusts)
  • Filling & Topping:
  • 1 ¾ cups (≈400 g) apple pie filling, chopped into small pieces
  • 240 ml caramel sauce
  • 1 egg, lightly beaten
  • 1 teaspoon cinnamon
  • ¼ cup (≈50 g) sugar

Instructions

  1. Make Apple Pie Filling: Toss sliced apples with lemon juice. Set aside.
  2. In a saucepan, combine cornstarch, white sugar, brown sugar, cinnamon, nutmeg, and water. Stir well and bring to a boil over medium-high heat, whisking constantly.
  3. Boil for 2 minutes until thickened. Stir in apple slices.
  4. Reduce heat to low, cover, and simmer for ~10 minutes until apples are soft but not mushy.
  5. Let cool, then chop apples into small pieces.
  6. Make Pie Crust: In a large bowl, mix flour, salt, and sugar.
  7. Cut in chilled butter using a pastry blender or your hands until mixture resembles coarse crumbs.
  8. Drizzle in 2 tablespoons ice water, mix, then repeat with remaining 2 tablespoons. Add more 1 tablespoon at a time if needed to form dough.
  9. Divide dough in half, form discs, wrap in plastic, and refrigerate 1 hour.
  10. Lightly dust work surface with flour. Roll each disc to 3 mm (1/8 inch) thickness.
  11. Assemble Apple Pie Cookies: Preheat oven to 175°C (350°F) and line a baking sheet with parchment paper.
  12. Spread caramel sauce over one pie crust. Add chopped apple filling and gently tap down.
  13. Cut the second crust into 1.25 cm (½ inch) strips to create a lattice top.
  14. Using a 6 cm (2.5 inch) round cookie cutter, cut cookies and place on baking sheet.
  15. Brush tops with beaten egg. Mix cinnamon and sugar, then sprinkle generously on top.
  16. Bake: Bake 20–30 minutes, until golden brown. Let cool slightly before serving.
