Description

Pecan Sandies are buttery, crumbly cookies packed with finely chopped pecans.


Ingredients

Scale
  • 1 cup unsalted butter, softened
  • ½ cup powdered sugar
  • 2 cups all-purpose flour
  • ¼ teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • ¾ cup pecans, finely chopped
  • 2 Tablespoons granulated sugar

Instructions

  1. Preheat oven to 350 degree F.
  2. Cream butter and powdered sugar together in a large bowl.
  3. Add flour, salt, and vanilla. It becomes very crumbly.
  4. Use your hands to mix in the chopped pecans until it becomes a ball.
  5. Using a 2 Tbsp cookie scoop, scoop dough and place on baking sheet with parchment paper, about 2 inches apart.
  6. Dampen a paper towel and press a glass onto the paper towel. Then dip the glass in the reserved granulated sugar.
  7. Press glass onto cookie dough to flatten until about 1/2 inch thick.
  8. Bake cookies for 11-13 minutes, just until lightly browned on edges.
  9. Remove and cool completely.

Notes

  • Use soft butter for the best texture.
  • If butter is cold, soften it in the microwave at 50% power.
  • For crunchier cookies, bake an additional minute or two, but watch closely.
  • You can skip granulated sugar and use powdered sugar after cooling.
