Description

Ingredients

  • 1 cup packed light brown sugar
  • ½ cup all-purpose flour
  • 2 cups chopped pecans
  • 2/3 cup butter, softened
  • 2 eggs, beaten

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease mini or regular muffin cups generously.
  3. In a medium bowl, stir together the brown sugar, flour, and chopped pecans.
  4. In a separate bowl, beat the softened butter and eggs together until combined.
  5. Stir the dry ingredients into the butter-egg mixture just until combined.
  6. Spoon the batter into the muffin cups, filling about 2/3 full.
  7. Bake: Mini muffins: 12–13 minutes, Regular muffins: 15–17 minutes.
  8. Run a knife around the edges and remove the muffins from the cups. Let them cool slightly before serving.

Notes

  • For extra flavor, sprinkle a few extra chopped pecans on top before baking.
