Pecan Pie Muffins are a delightful treat combining the rich flavors of pecan pie in a convenient muffin form.

- 1 cup packed light brown sugar
- ½ cup all-purpose flour
- 2 cups chopped pecans
- 2/3 cup butter, softened
- 2 eggs, beaten
Instructions
- Preheat the oven to 350°F (175°C).
- Grease mini or regular muffin cups generously.
- In a medium bowl, stir together the brown sugar, flour, and chopped pecans.
- In a separate bowl, beat the softened butter and eggs together until combined.
- Stir the dry ingredients into the butter-egg mixture just until combined.
- Spoon the batter into the muffin cups, filling about 2/3 full.
- Bake: Mini muffins: 12–13 minutes, Regular muffins: 15–17 minutes.
- Run a knife around the edges and remove the muffins from the cups. Let them cool slightly before serving.
Notes
- For extra flavor, sprinkle a few extra chopped pecans on top before baking.
- Store in an airtight container at room temperature for up to 3 days.
