- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 cup milk
- 2 large eggs
- 1 tablespoon baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 cups sliced peaches (fresh or canned)
- 1/2 cup brown sugar
- 1/4 cup water
Instructions
- Preheat the oven to 350°F (175°C).
- In a saucepan, combine brown sugar and water over medium heat until dissolved, then pour into the bottom of greased muffin tins.
- Arrange sliced peaches on top of the brown sugar mixture in each muffin cup.
- In a mixing bowl, cream together the butter and granulated sugar until light and fluffy.
- Add eggs and vanilla extract, mixing well.
- In another bowl, combine flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with milk, until just combined.
- Spoon the batter over the peaches in the muffin tins.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Let cool for a few minutes before inverting onto a serving plate.
Notes
- For a richer flavor, use brown sugar in the cake batter.
- These mini cakes can be served warm or at room temperature.
- Store leftovers in an airtight container for up to 3 days.
