  • 7 cups (about 4 pounds) sweet potatoes, cooked and mashed
  • ½ cup firmly packed dark brown sugar
  • 3 large eggs, lightly beaten
  • ¼ cup heavy whipping cream
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon kosher salt
  • 3 cups mini marshmallows
  • 1 cup toasted chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease an 11×7-inch baking dish.
  2. In a large bowl, whisk together the mashed sweet potatoes, brown sugar, eggs, heavy cream, cinnamon, and salt until smooth and well combined.
  3. Spread the mixture evenly into the prepared baking dish.
  4. Bake for 45–55 minutes, or until the casserole is set and heated through.
  5. Remove from the oven and evenly sprinkle the marshmallows and toasted pecans over the top.
  6. Return to the oven and bake for 10 more minutes, until the marshmallows are soft and lightly golden.
  7. Let the casserole rest for 10 minutes before serving. Scoop, serve warm, and enjoy!

Notes

  • Extra rich: Add 1–2 tablespoons of melted butter to the sweet potato mixture.
  • Less sweet: Reduce marshmallows to 2 cups or skip them and double the pecans.
