- 7 cups (about 4 pounds) sweet potatoes, cooked and mashed
- ½ cup firmly packed dark brown sugar
- 3 large eggs, lightly beaten
- ¼ cup heavy whipping cream
- 1 teaspoon ground cinnamon
- ¼ teaspoon kosher salt
- 3 cups mini marshmallows
- 1 cup toasted chopped pecans
Instructions
- Preheat the oven to 350°F (175°C). Lightly grease an 11×7-inch baking dish.
- In a large bowl, whisk together the mashed sweet potatoes, brown sugar, eggs, heavy cream, cinnamon, and salt until smooth and well combined.
- Spread the mixture evenly into the prepared baking dish.
- Bake for 45–55 minutes, or until the casserole is set and heated through.
- Remove from the oven and evenly sprinkle the marshmallows and toasted pecans over the top.
- Return to the oven and bake for 10 more minutes, until the marshmallows are soft and lightly golden.
- Let the casserole rest for 10 minutes before serving. Scoop, serve warm, and enjoy!
Notes
- Extra rich: Add 1–2 tablespoons of melted butter to the sweet potato mixture.
- Less sweet: Reduce marshmallows to 2 cups or skip them and double the pecans.
- Make ahead: Assemble (without toppings), cover, and refrigerate up to 24 hours. Add toppings just before the final bake.
