Ingredients

  • 2 acorn squash (small to medium)
  • ¼ cup extra-virgin olive oil
  • 1 cup finely grated Parmesan cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ½ teaspoon dried basil
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano

Instructions

  1. Prep the squash: Preheat the oven to 425°F (220°C). Slice off the top and bottom of each squash, stand them on a flat end, and slice in half. Scoop out the seeds, then cut each half into 1-inch thick slices.
  2. Season: In a large mixing bowl, combine the squash slices with olive oil, Parmesan, garlic powder, salt, basil, thyme, and oregano. Toss well to coat evenly.
  3. Roast: Place the slices on a parchment-lined baking tray. Press any leftover Parmesan mixture onto the tops. Bake for 20–25 minutes, until tender and lightly golden.
  4. Serve: Transfer to a platter and enjoy warm.
