Instructions
- Preheat the oven to 350°F (175°C).
 - In a large bowl, whisk together the eggs, milk, salt, and pepper.
 - Add the torn croissant pieces to the egg mixture and stir to combine.
 - Fold in the cheese, sausage (if using), and green onions.
 - Pour the mixture into a greased baking dish.
 - Cover and refrigerate overnight.
 - The next morning, uncover and bake for 30-35 minutes or until the casserole is set and golden brown.
 - Let it cool for a few minutes before serving.
