Description

One-Pot Garlic Butter Shrimp Pasta is a creamy and flavorful dish that combines shrimp, pasta, and a rich garlic butter sauce, all cooked in one pot for easy cleanup.


Ingredients

  • 1 pound of linguine or fettuccine pasta, dried
  • 1 pound of large shrimp, peeled and deveined
  • ½ cup (1 stick) of unsalted butter
  • 68 cloves of garlic, minced
  • 4 cups of low-sodium chicken broth
  • ½ cup of heavy cream
  • 2 tablespoons of fresh lemon juice
  • ¼ teaspoon of red pepper flakes (optional)
  • ¼ cup of fresh parsley, chopped
  • ½ cup of grated Parmesan cheese, plus extra for serving
  • Salt and black pepper to taste
  • 2 tablespoons of olive oil

Instructions

  1. In a large skillet over medium heat, melt 2 tablespoons of olive oil and ¼ cup of butter. Sauté the minced garlic and red pepper flakes for about 1 minute until fragrant.
  2. Add the shrimp and cook for 2-3 minutes per side until pink and slightly opaque. Remove shrimp from skillet and set aside.
  3. Pour chicken broth into the skillet and add the dried pasta, breaking long strands if needed. Add the remaining ¼ cup of butter and bring to a boil.
  4. Reduce heat to medium-low, cover, and simmer for 10-12 minutes or until pasta is al dente and most liquid is absorbed, stirring occasionally.
  5. Stir in heavy cream, grated Parmesan cheese, and lemon juice until cheese is melted and sauce is smooth. Simmer uncovered if sauce is too liquid.
  6. Gently fold shrimp back into pasta and heat for 1-2 minutes until shrimp are fully cooked.
  7. Stir in fresh parsley, adjust seasoning with salt and black pepper, and serve immediately with extra Parmesan cheese on top.
