- ½ cup granulated sugar
- ½ cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 12 oz butterscotch chips
Instructions
- Preheat oven to 350°F. Line two cookie sheets with parchment paper or lightly grease.
- Beat butter, granulated sugar, and brown sugar on medium speed for 3–5 minutes until light and fluffy.
- Mix in the egg and vanilla. Scrape down the bowl to ensure everything is well combined.
- In a separate bowl, whisk flour, baking soda, and salt. Gradually add to the wet mixture on low speed. Do not overmix.
- Stir in the butterscotch chips with a spatula until evenly distributed.
- Scoop about 1 tablespoon of dough per cookie onto prepared sheets, spacing 2 inches apart (about 15 per sheet).
- Bake for 10–12 minutes until edges are golden and centers remain soft. Cool on the sheet for 5 minutes, then transfer to a wire rack.
Notes
- Dough balls can be frozen and baked from frozen (add 1–2 minutes).
- Try swapping half the butterscotch chips for chocolate chips.
