Ingredients

  • 12 oz butterscotch chips

Instructions

  1. Preheat oven to 350°F. Line two cookie sheets with parchment paper or lightly grease.
  2. Beat butter, granulated sugar, and brown sugar on medium speed for 3–5 minutes until light and fluffy.
  3. Mix in the egg and vanilla. Scrape down the bowl to ensure everything is well combined.
  4. In a separate bowl, whisk flour, baking soda, and salt. Gradually add to the wet mixture on low speed. Do not overmix.
  5. Stir in the butterscotch chips with a spatula until evenly distributed.
  6. Scoop about 1 tablespoon of dough per cookie onto prepared sheets, spacing 2 inches apart (about 15 per sheet).
  7. Bake for 10–12 minutes until edges are golden and centers remain soft. Cool on the sheet for 5 minutes, then transfer to a wire rack.
