Oatmeal Protein Cookies are a healthy and delicious snack packed with protein and flavor.
Ingredients

- 1 egg
- 100 g ripe banana, mashed, or 1/2 cup applesauce
- 80 g nut butter (peanut or almond butter)
- 100 g granulated sweetener (erythritol, monk fruit, coconut sugar, or brown sugar)
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
- 1/4 tsp salt
- 150 g rolled oats
- 30 g oat flour
- 30 g protein powder
- 1 tsp baking powder
- Chocolate chips, as desired
Instructions
- Preheat the oven to 190°C (400°F) and line a baking sheet with parchment paper.
- In a large bowl, whisk the egg, mashed banana (or applesauce), and nut butter until smooth and creamy.
- Add the sweetener, cinnamon, vanilla extract, and salt. Mix well for 1–2 minutes until fully combined.
- Add rolled oats, oat flour, protein powder, and baking powder. Stir until a thick dough forms. If needed, add a small amount of milk to loosen the dough.
- Fold in the chocolate chips.
- Refrigerate the dough for at least 10 minutes.
- Scoop about 1/3 cup of dough and shape into 9 cookies. Place them on the prepared baking sheet, leaving space between each.
- Bake for 10–12 minutes until set.
- Remove from the oven and let cool on a wire rack.
Notes
- Chilling the dough helps the cookies hold their shape while baking.
- Different protein powders absorb moisture differently, so adjust the dough consistency if needed.
- Cookies will firm up more as they cool.
