Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9×13 inch baking pan.
- In a bowl, mix the grated zucchini, sugar, brown sugar, and oil.
- Add eggs and vanilla, then mix until well combined.
- In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
- Gradually add dry ingredients to the wet mixture, stirring until just combined.
- Pour the batter into the prepared pan.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let the cake cool completely before icing.
