Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
  • Prepare the Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  • Mix Wet Ingredients: In a large bowl, beat the sugar, oil, eggs, and vanilla extract until well combined and smooth.
  • Combine and Fold: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix. Fold in the grated carrots, zucchini, and nuts if using.
