Description
Mississippi Mud Brownies are rich, chocolatey treats topped with marshmallows and frosting.
Ingredients

- 1/3 cup unsweetened cocoa powder
- 1/2 cup vegetable or canola oil
- 1/2 cup butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 2 teaspoons alcohol-free vanilla flavoring
- 1 1/2 cups all-purpose flour
- 1 teaspoon salt
- 3 cups gelatin-free mini marshmallows
- 1/2 cup butter, melted (for frosting)
- 1/3 cup unsweetened cocoa powder (for frosting)
- 1/3 cup evaporated milk (for frosting)
- 1 teaspoon alcohol-free vanilla flavoring (for frosting)
- 3 to 3 1/2 cups powdered sugar (for frosting)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan with non-stick spray.
- In a large bowl, pour the oil over the cocoa powder and mix well.
- Add softened butter and mix until smooth. Add sugar and mix for about 1 minute.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla flavoring.
- Add flour and salt and stir just until combined.
- Pour batter into the prepared pan and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
- Remove brownies from the oven and immediately sprinkle marshmallows evenly over the top. Return to the oven for 2–3 minutes, until marshmallows are puffed.
- Remove from oven and allow brownies to cool completely.
- In a mixing bowl, combine melted butter, cocoa powder, evaporated milk, vanilla flavoring, and 2 cups of powdered sugar. Beat until smooth.
- Add remaining powdered sugar gradually until desired frosting consistency is reached.
- Spread frosting evenly over cooled brownies and cut into squares.
Notes
- Cutting Tip: A plastic knife works best for clean cuts through the frosting and marshmallows.
- Variations: Add 1 cup chopped nuts to the batter or sprinkle nuts on top with the marshmallows.
- Make Ahead: These brownies taste even better the next day and are easier to cut. Frosting can be made up to 2 weeks in advance and stored in the refrigerator in an airtight container.
- Freezing: Brownies can be frozen frosted or unfrosted for up to 3 months. Thaw at room temperature before serving.
