Description

Mississippi Mud Brownies are rich, chocolatey treats topped with marshmallows and frosting.


Ingredients

  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup vegetable or canola oil
  • 1/2 cup butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons alcohol-free vanilla flavoring
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 3 cups gelatin-free mini marshmallows
  • 1/2 cup butter, melted (for frosting)
  • 1/3 cup unsweetened cocoa powder (for frosting)
  • 1/3 cup evaporated milk (for frosting)
  • 1 teaspoon alcohol-free vanilla flavoring (for frosting)
  • 3 to 3 1/2 cups powdered sugar (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan with non-stick spray.
  2. In a large bowl, pour the oil over the cocoa powder and mix well.
  3. Add softened butter and mix until smooth. Add sugar and mix for about 1 minute.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla flavoring.
  5. Add flour and salt and stir just until combined.
  6. Pour batter into the prepared pan and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Remove brownies from the oven and immediately sprinkle marshmallows evenly over the top. Return to the oven for 2–3 minutes, until marshmallows are puffed.
  8. Remove from oven and allow brownies to cool completely.
  9. In a mixing bowl, combine melted butter, cocoa powder, evaporated milk, vanilla flavoring, and 2 cups of powdered sugar. Beat until smooth.
  10. Add remaining powdered sugar gradually until desired frosting consistency is reached.
  11. Spread frosting evenly over cooled brownies and cut into squares.

Notes

  • Cutting Tip: A plastic knife works best for clean cuts through the frosting and marshmallows.
  • Variations: Add 1 cup chopped nuts to the batter or sprinkle nuts on top with the marshmallows.
  • Make Ahead: These brownies taste even better the next day and are easier to cut. Frosting can be made up to 2 weeks in advance and stored in the refrigerator in an airtight container.
