Description
A hearty and flavorful miso udon noodle soup topped with teriyaki mushrooms.
Ingredients

- 200g udon noodles
- 4 cups vegetable broth
- 3 tablespoons miso paste
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 200g mushrooms, sliced
- 2 tablespoons teriyaki sauce
- 1 green onion, sliced
- 1 teaspoon ginger, grated
- 1 clove garlic, minced
Instructions
- Cook udon noodles according to package instructions.
- In a pot, heat sesame oil over medium heat.
- Add garlic and ginger, sauté for 1 minute.
- Add sliced mushrooms and cook until tender.
- Stir in teriyaki sauce and cook for 2 minutes.
- In a separate bowl, mix miso paste with a little broth until smooth.
- Add vegetable broth to the pot and bring to a simmer.
- Stir in the miso mixture and soy sauce.
- Add cooked udon noodles and heat through.
- Serve in bowls, garnished with sliced green onions.
Notes
- Adjust the amount of miso for desired saltiness.
- Feel free to add other vegetables.
- Store leftovers in the fridge for up to 2 days.
