Ingredients

  • 2 cups corn kernels
  • 1 lb shrimp, peeled and deveined
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup cotija cheese, crumbled
  • 1 tsp chili powder
  • 1 lime, juiced
  • 2 tbsp cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat some oil over medium heat and add the shrimp. Cook until pink and opaque, about 3-4 minutes.
  2. In a separate bowl, mix together the mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
  3. Add the corn to the skillet with the shrimp and cook for an additional 2-3 minutes until heated through.
  4. Remove from heat and stir in the mayonnaise mixture until well combined.
  5. Top with crumbled cotija cheese and chopped cilantro before serving.

Notes

  • For a spicier version, add diced jalapeños to the mixture.
