Ingredients
For the Pretzel Dough:
1 ½ cups warm water (110°F/45°C)
1 tbsp sugar
2 ¼ tsp active dry yeast (1 packet)
3 ½ cups all-purpose flour
1 tsp salt
1 tbsp olive oil
For the Maple Brown Sugar Coating:
½ cup unsalted butter, melted
¼ cup maple syrup
¼ cup packed brown sugar
1 tsp vanilla extract
¼ tsp cinnamon (optional)
For Boiling:
10 cups water
⅓ cup baking soda
Instructions
Prepare the Dough:
In a large bowl, combine warm water, sugar, and yeast. Let sit for about 5 minutes until frothy.
Add flour, salt, and olive oil to the yeast mixture. Stir until combined and knead on a floured surface for about 5-7 minutes until the dough is smooth and elastic.
Place the dough in a lightly oiled bowl, cover with a clean towel, and let rise for 1 hour or until doubled in size.
Preheat Oven:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Shape the Pretzel Bites:
Once the dough has risen, punch it down. Divide the dough into 6 equal portions. Roll each portion into a long rope, about 1 inch thick. Cut the ropes into 1-inch pieces.
Boil the Bites:
In a large pot, bring the water to a boil and add the baking soda. Carefully drop the dough pieces into the boiling water, a few at a time. Boil for 30 seconds and remove with a slotted spoon.
Bake:
Arrange the boiled dough bites on the prepared baking sheet. Bake in the preheated oven for 10-12 minutes or until golden brown.
Prepare the Maple Brown Sugar Coating:
While the bites are baking, mix the melted butter, maple syrup, brown sugar, vanilla extract, and cinnamon (if using) in a bowl.
Coat the Pretzel Bites:
