Description

Magnolia Bakery Blueberry Jamboree is a delicious dessert with a creamy filling and a fruity blueberry topping.


Ingredients

  • Blueberry Topping:
    • 4 cups fresh blueberries
    • ¼ cup granulated sugar
    • 2 tbsp brown sugar
    • 1 tbsp water
    • 1½ tbsp cornstarch mixed with 1½ tbsp water
    • 1 tsp lemon zest
    • ½ tsp lemon juice
  • Crust:
    • ¾ cup butter, melted
    • 2 cups all-purpose flour
    • 1 cup chopped pecans (toasted or untoasted)
  • Filling:
    • 2 cups heavy whipping cream
    • 2 cups + 2 tbsp powdered sugar
    • 16 oz. cream cheese, softened
    • 1 tsp vanilla extract

Instructions

  1. Blueberry Topping: Cook 2 cups blueberries, granulated sugar, brown sugar, and water over medium heat, stirring and gently crushing berries. Once boiling, stir in cornstarch mixture and cook until slightly thickened (about 1 minute). Remove from heat and stir in remaining blueberries, lemon zest, and lemon juice. Refrigerate until fully cooled.
  2. Crust: Preheat oven to 325°F (165°C). Mix melted butter, flour, and pecans. Press into a greased 9×13-inch pan. Bake for 15 minutes, then cool completely.
  3. Filling: Whip cream with vanilla until thick but not fully stiff. In a separate bowl, beat cream cheese with powdered sugar. Combine both mixtures until smooth.
  4. Assemble: Spread filling over cooled crust. Spoon cooled blueberry topping evenly over the top. Cover and refrigerate until ready to serve.

Notes

  • The blueberry topping must be completely cool before assembling.
  • Toasting pecans adds extra flavor.
  • Best served chilled.
