Low Calorie Banana Bread recipe that’s simple and healthy.

- 1 egg
- 1 egg white (or 1 whole egg)
- 2 ripe bananas (about 200 g / 7 oz total)
- 45 g (3 tbsp) maple syrup or honey
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/6 tsp salt
- 180 g (1 3/4 cups) oat flour (or preferred flour)
- 15–45 ml (1–3 tbsp) milk of choice, as needed
- 1 1/2 tsp baking powder
Instructions
- Preheat the oven to 180°C (350°F). Line a 20 cm (7.9-inch) loaf pan with parchment paper or grease with oil.
- In a large bowl, mash the bananas until completely smooth. Add the egg, egg white, maple syrup, vanilla extract, cinnamon, and salt. Mix until smooth.
- Stir in the oat flour and baking powder. Gradually add milk, starting with 1 tablespoon and adding up to 3 tablespoons only if the batter is too thick.
- Pour the batter into the prepared loaf pan.
- Bake for 30–40 minutes, or until a toothpick inserted in the center comes out clean.
- Remove from the oven and let cool in the pan for 15 minutes. Remove from the pan and cool completely before slicing.
Notes
- Store at room temperature in an airtight container for up to 3 days.
- Refrigerate for up to 5 days.
- Freeze in a freezer-safe container for up to 3 months. Thaw and reheat briefly before serving.
