Ingredients

  • 1 egg
  • 1 egg white (or 1 whole egg)
  • 2 ripe bananas (about 200 g / 7 oz total)
  • 45 g (3 tbsp) maple syrup or honey
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/6 tsp salt
  • 180 g (1 3/4 cups) oat flour (or preferred flour)
  • 1545 ml (1–3 tbsp) milk of choice, as needed
  • 1 1/2 tsp baking powder

Instructions

  1. Preheat the oven to 180°C (350°F). Line a 20 cm (7.9-inch) loaf pan with parchment paper or grease with oil.
  2. In a large bowl, mash the bananas until completely smooth. Add the egg, egg white, maple syrup, vanilla extract, cinnamon, and salt. Mix until smooth.
  3. Stir in the oat flour and baking powder. Gradually add milk, starting with 1 tablespoon and adding up to 3 tablespoons only if the batter is too thick.
  4. Pour the batter into the prepared loaf pan.
  5. Bake for 30–40 minutes, or until a toothpick inserted in the center comes out clean.
  6. Remove from the oven and let cool in the pan for 15 minutes. Remove from the pan and cool completely before slicing.

Notes

  • Store at room temperature in an airtight container for up to 3 days.
  • Refrigerate for up to 5 days.
  • Freeze in a freezer-safe container for up to 3 months. Thaw and reheat briefly before serving.
