  • Salt & pepper to taste

  • 1 tablespoon olive oil

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

For the Parmesan Crust:

  • 1/2 cup grated Parmesan cheese

  • 1/2 cup shredded provolone or mozzarella cheese

  • 1/4 cup mayonnaise

  • 1 tablespoon chopped parsley

  • 1 teaspoon Dijon mustard

  • Optional: a pinch of crushed red pepper


Instructions

1. Prepare and Cook the Chicken:

  • Preheat oven to 400°F (200°C).

  • Season chicken breasts with salt, pepper, garlic powder, and onion powder.

  • Heat olive oil in a skillet over medium heat. Sear chicken on both sides until golden brown (about 3–4 minutes per side).

  • Transfer chicken to a baking dish.

2. Make the Parmesan Crust:

  • In a small bowl, mix Parmesanprovolonemayonnaisemustard, and parsley until combined.

3. Top and Bake:

  • Spoon the cheese mixture evenly over each chicken breast.

  • Bake for 10–15 minutes or until the chicken is cooked through (internal temp: 165°F/74°C) and the topping is bubbly and golden.

4. Serve:

  • Garnish with extra parsley.

  • Serve hot with roasted vegetables, mashed potatoes, or pasta.
