Ingredients

  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1/4 tsp crushed red pepper
  • 1 large head broccoli, cut into small florets
  • Salt, to taste
  • Black pepper, to taste
  • 12 oz shell pasta
  • 1 cup grated Parmesan cheese

Instructions

  1. Bring a large pot of salted water to a boil. Add broccoli and cook for about 5 minutes until tender.
  2. Remove the broccoli and reserve 1/2 cup of the cooking water.
  3. In a skillet over medium heat, add olive oil, garlic, and crushed red pepper.
  4. Add the cooked broccoli and the reserved water. Season with salt and pepper.
  5. Cook for about 10 minutes, stirring occasionally, until very soft and easy to mash with a spoon.
  6. In the same pot, cook the shell pasta until al dente according to package directions. Drain well.
  7. Add the drained pasta to the skillet with the broccoli mash.
  8. Stir in the Parmesan cheese until fully combined.
  9. Add a splash of pasta water if needed to loosen the sauce.
  10. Adjust seasoning with more salt and pepper if needed.
  11. Serve warm with extra Parmesan on top.
