Description

A hearty and flavorful lentil sausage soup that combines ground beef sausage with vegetables and spices.


Ingredients

  • 1 lb. ground beef sausage (hot or mild)
  • 1 small yellow onion, diced
  • 1 cup carrots, diced
  • ½ cup celery, diced
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 2 tablespoons flour
  • 1 tablespoon tomato paste
  • 6 cups chicken broth
  • 2 cups beef broth
  • 1 teaspoon soy sauce
  • 1 teaspoon hot sauce
  • 1 cup dry brown lentils, rinsed
  • 1 bay leaf
  • 1 (14.5 oz.) can diced tomatoes, drained
  • 1 teaspoon dried basil
  • ½ teaspoon dried parsley
  • ½ teaspoon oregano
  • ½ teaspoon mustard powder
  • ¼ teaspoon black pepper

Instructions

  1. Cook and crumble the beef sausage in a large pot over medium heat until fully cooked, about 10–12 minutes. Remove and set aside. Reserve 1 tablespoon drippings or use butter.
  2. Add drippings and butter to the pot. Sauté onions, carrots, and celery for 4 minutes. Add garlic and cook 1 minute.
  3. Stir in flour and tomato paste; cook for 2 minutes.
  4. Gradually add chicken and beef broth, scraping the bottom of the pot.
  5. Add soy sauce, hot sauce, lentils, bay leaf, and seasonings. Bring to a boil, then reduce to a simmer. Cover partially and cook for 45 minutes, stirring occasionally.
  6. Return sausage to the pot along with diced tomatoes. Simmer 10 minutes.
  7. Adjust thickness with additional broth if needed and serve.

Notes

  • Kale (last 5 minutes) or spinach (last 3 minutes) can be added.
  • Use low-sodium broth if preferred.
  • For a lighter soup, reduce beef sausage to ½–¾ lb.
  • Brown lentils work best; avoid red or canned lentils.
  • Crock Pot Method: Brown beef sausage separately, then combine all ingredients (except flour and drippings) and cook on high 4–5 hours or low 7–8 hours.
