Ingredients

  • 1 lb asparagus, trimmed and cut into 2-inch pieces
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large pot of boiling salted water, blanch the asparagus for 2-3 minutes until bright green and tender-crisp. Drain and rinse under cold water.
  3. In a large bowl, combine the cooked pasta, blanched asparagus, cherry tomatoes, red onion, and parsley.
  4. In a small bowl, whisk together the olive oil, lemon juice, lemon zest, salt, and pepper.
  5. Pour the dressing over the pasta salad and toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.
