- 8 oz pasta (your choice)
- 1 lb asparagus, trimmed and cut into 2-inch pieces
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 tsp lemon zest
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large pot of boiling salted water, blanch the asparagus for 2-3 minutes until bright green and tender-crisp. Drain and rinse under cold water.
- In a large bowl, combine the cooked pasta, blanched asparagus, cherry tomatoes, red onion, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, lemon zest, salt, and pepper.
- Pour the dressing over the pasta salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.

- Feel free to add other vegetables like bell peppers or cucumbers for extra crunch.
- This salad can be made a day in advance for better flavor.
