A tangy and refreshing lemon vinaigrette dressing perfect for salads.
Ingredients

- ¼ cup apple cider vinegar
- 2 tablespoons fresh lemon juice
- 2 tablespoons water
- 1 tablespoon plain mustard (without wine or alcohol)
- 2 teaspoons honey or maple syrup, or stevia to taste
- 1 teaspoon dried oregano (or 1 tablespoon fresh, finely chopped)
- 1 clove garlic, minced
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
- ½ cup + 2 tablespoons olive oil
Instructions
- In a small bowl, whisk together the apple cider vinegar, lemon juice, water, mustard, sweetener, oregano, garlic, salt, and black pepper.
- Slowly pour in the olive oil while whisking continuously until the dressing becomes smooth and well combined.
- Alternatively, blend all ingredients in a blender or shake everything together in a sealed jar until fully mixed.
- Taste and adjust seasoning or sweetness if needed.

- Store in the refrigerator for up to a week.
