Lemon Spinach Parmesan Chicken is a quick and delicious dish that combines tender chicken with a creamy lemon sauce and fresh spinach.

- 4 boneless, skinless chicken breasts
- Salt and pepper, to season
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup chicken broth
- ¾ cup heavy cream
- Juice of 1 lemon
- 1 teaspoon lemon zest
- ½ cup grated Parmesan cheese
- 4 cups fresh spinach leaves
- Extra Parmesan and thin lemon slices, for garnish
Instructions
- Pound chicken breasts to an even thickness. Season both sides with salt and pepper.
- Heat olive oil in a large sauté pan over medium-high heat. Cook chicken 3–4 minutes per side until golden and cooked through. Remove and set aside.
- In the same pan, sauté garlic for about 1 minute.
- Add chicken broth, lemon juice, and zest, scraping up browned bits. Bring to a boil.
- Reduce heat to low, stir in heavy cream, and simmer 5 minutes until slightly thickened.
- Stir in Parmesan until melted.
- Add spinach and cook until wilted (about 1 minute).
- Return chicken to the pan and spoon sauce over top. Sprinkle with extra Parmesan.
- Cover and cook 2 more minutes.
- Garnish with lemon slices and more Parmesan. Serve immediately.
