Lemon Spinach Parmesan Chicken is a quick and delicious dish that combines tender chicken with a creamy lemon sauce and fresh spinach.


Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to season
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • ¾ cup heavy cream
  • Juice of 1 lemon
  • 1 teaspoon lemon zest
  • ½ cup grated Parmesan cheese
  • 4 cups fresh spinach leaves
  • Extra Parmesan and thin lemon slices, for garnish

Instructions

  1. Pound chicken breasts to an even thickness. Season both sides with salt and pepper.
  2. Heat olive oil in a large sauté pan over medium-high heat. Cook chicken 3–4 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same pan, sauté garlic for about 1 minute.
  4. Add chicken broth, lemon juice, and zest, scraping up browned bits. Bring to a boil.
  5. Reduce heat to low, stir in heavy cream, and simmer 5 minutes until slightly thickened.
  6. Stir in Parmesan until melted.
  7. Add spinach and cook until wilted (about 1 minute).
  8. Return chicken to the pan and spoon sauce over top. Sprinkle with extra Parmesan.
  9. Cover and cook 2 more minutes.
  10. Garnish with lemon slices and more Parmesan. Serve immediately.
