Ingredients

- 1 cup grated zucchini
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/4 cup vegetable oil
- 1 large egg
- 1/4 cup lemon juice
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 tablespoon poppy seeds
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the grated zucchini, sugar, oil, egg, and lemon juice.
- In another bowl, combine the flour, baking powder, baking soda, salt, and poppy seeds.
- Mix the dry ingredients into the wet ingredients until just combined.
- Pour the batter into a greased loaf pan.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Let it cool before slicing.
Notes
- Store leftovers in an airtight container.
- Best served at room temperature.
- Add nuts for extra crunch if desired.
