A quick and flavorful dish featuring shrimp marinated in lemon and garlic.
Ingredients

- 1 lb. shrimp, uncooked
- 1 teaspoon salt
- ½ teaspoon pepper
- 1/3 cup olive oil
- 2 Tablespoon lemon juice
- 1 Tablespoon garlic, minced
- ½ teaspoon red pepper flakes
- 1 tablespoon parsley, fresh & finely diced
Instructions
- Soak your skewers in water for about 1.5 hours prior to grilling if desired.
- If the shell is still on the shrimp, carefully peel it away. Rinse the shrimp under cold water and pat dry.
- In a medium bowl, combine the marinade ingredients. Pour it into a freezer bag and add the shrimp.
- Marinade the shrimp for 20-30 minutes.
- Heat the grill to high. Place the skewers on the grill and cook for about 2-3 minutes, then flip and cook for another 2 minutes.
- Remove from the grill when the shrimp are pink and opaque.
- Serve, peeling away the shell prior to eating.
Notes
- To bake these shrimp, preheat the oven to 450°. Spray a baking sheet and bake for 5-7 minutes.
- For pan frying, add oil to a large pan over medium-high heat. Once heated, add the shrimp and cook for about 1 minute + 30 seconds per side.
