- 3 large eggs

- 1 cup fresh blueberries
- 2 tablespoons cornstarch
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
- In a large mixing bowl, beat the cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in sour cream, lemon zest, and lemon juice until combined.
- In a separate bowl, toss blueberries with cornstarch, then gently fold them into the cheesecake mixture.
- Pour the cheesecake batter over the crust in the springform pan.
- Bake for 50-60 minutes or until the center is set but slightly jiggly.
- Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
- Refrigerate for at least 4 hours or overnight before serving.

- For a stronger lemon flavor, increase the lemon zest.
