- 1 lb ground beef
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken or vegetable broth
- 8 oz lasagna noodles, broken into pieces
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground beef over medium heat. Drain excess fat.
- Add chopped onion and minced garlic, cooking until the onion is translucent.
- Stir in crushed tomatoes, broth, basil, oregano, salt, and pepper. Bring to a boil.
- Add broken lasagna noodles and reduce heat. Simmer until noodles are tender, about 10-12 minutes.
- In a separate bowl, mix ricotta cheese with a pinch of salt and pepper.
- Serve the soup in bowls, adding a dollop of ricotta cheese and topping with mozzarella and Parmesan cheese.
- Garnish with fresh basil if desired.
