Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh thyme, snipped
  • ¼ teaspoon cracked black pepper
  • ¼ teaspoon sea salt
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 4 lamb chops
  • 1 cup white or red wine
  • ¼ cup Dijon mustard
  • 1 teaspoon fresh thyme
  • 1 clove garlic, minced
  • 2 tablespoons heavy cream (optional)

Instructions

  1. In a medium bowl, mix olive oil, lemon juice, thyme, pepper, salt, and garlic.
  2. Arrange lamb chops on a large plate and pour marinade over them, coating all sides.
  3. Let marinate at room temperature for 30 minutes.
  4. Heat 1 tablespoon olive oil in a large skillet over medium heat until hot.
  5. Add lamb chops and cook for 4 minutes on one side.
  6. Flip and cook for another 4 minutes on the other side.
  7. Remove lamb chops from the skillet and set aside.
  8. In the same skillet, add wine and bring to a boil.
  9. Add Dijon mustard, fresh thyme, and minced garlic.
  10. Boil and reduce for a few minutes until the sauce thickens.
  11. Stir in heavy cream (optional) to mellow the flavors. Adjust to taste.
  12. Return lamb chops to the skillet and simmer on low-medium heat to warm through.
  13. If needed, cover and cook a few more minutes until lamb reaches medium doneness.
  14. Season sauce with additional salt and cracked pepper if needed.
  15. Let lamb rest briefly, then spoon sauce over the top and garnish with fresh thyme.
