Description
Lamb chops marinated and served with a mustard-thyme sauce.
Ingredients

- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 tablespoons fresh thyme, snipped
- ¼ teaspoon cracked black pepper
- ¼ teaspoon sea salt
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 4 lamb chops
- 1 cup white or red wine
- ¼ cup Dijon mustard
- 1 teaspoon fresh thyme
- 1 clove garlic, minced
- 2 tablespoons heavy cream (optional)
Instructions
- In a medium bowl, mix olive oil, lemon juice, thyme, pepper, salt, and garlic.
- Arrange lamb chops on a large plate and pour marinade over them, coating all sides.
- Let marinate at room temperature for 30 minutes.
- Heat 1 tablespoon olive oil in a large skillet over medium heat until hot.
- Add lamb chops and cook for 4 minutes on one side.
- Flip and cook for another 4 minutes on the other side.
- Remove lamb chops from the skillet and set aside.
- In the same skillet, add wine and bring to a boil.
- Add Dijon mustard, fresh thyme, and minced garlic.
- Boil and reduce for a few minutes until the sauce thickens.
- Stir in heavy cream (optional) to mellow the flavors. Adjust to taste.
- Return lamb chops to the skillet and simmer on low-medium heat to warm through.
- If needed, cover and cook a few more minutes until lamb reaches medium doneness.
- Season sauce with additional salt and cracked pepper if needed.
- Let lamb rest briefly, then spoon sauce over the top and garnish with fresh thyme.
