Description
A flavorful bowl of Korean braised chicken thighs (Dakbokkeumtang) simmered with gochujang, carrots, potatoes, and onions—served hot with rice.

- 4 chicken thighs
- 1 cup soy sauce
- 1/2 cup brown sugar
- 1/4 cup rice vinegar
- 1 tablespoon sesame oil
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 2 green onions, chopped
- 1 tablespoon sesame seeds
Instructions
- In a large bowl, mix soy sauce, brown sugar, rice vinegar, sesame oil, garlic, and ginger.
- Add chicken thighs to the marinade and let them sit for at least 30 minutes.
- Heat a large skillet over medium heat and add the marinated chicken thighs.
- Cook the chicken for about 5-7 minutes on each side until browned.
- Pour the remaining marinade over the chicken and bring to a simmer.
- Cover and cook for 20-25 minutes, or until the chicken is cooked through.
- Garnish with green onions and sesame seeds before serving.
Notes
- For extra flavor, marinate the chicken overnight.
- Serve with steamed rice or vegetables for a complete meal.
- Adjust the sweetness by adding more or less brown sugar.
