Description

A flavorful bowl of Korean braised chicken thighs (Dakbokkeumtang) simmered with gochujang, carrots, potatoes, and onions—served hot with rice.


Ingredients

  • 4 chicken thighs
  • 1 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup rice vinegar
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds

Instructions

  1. In a large bowl, mix soy sauce, brown sugar, rice vinegar, sesame oil, garlic, and ginger.
  2. Add chicken thighs to the marinade and let them sit for at least 30 minutes.
  3. Heat a large skillet over medium heat and add the marinated chicken thighs.
  4. Cook the chicken for about 5-7 minutes on each side until browned.
  5. Pour the remaining marinade over the chicken and bring to a simmer.
  6. Cover and cook for 20-25 minutes, or until the chicken is cooked through.
  7. Garnish with green onions and sesame seeds before serving.

Notes

  • For extra flavor, marinate the chicken overnight.
  • Serve with steamed rice or vegetables for a complete meal.
  • Adjust the sweetness by adding more or less brown sugar.
