Ingredients

  • 2 medium zucchinis, grated
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add onion and garlic; sauté until soft.
  3. Stir in grated zucchini and cook for 5 minutes.
  4. Add diced tomatoes and basil; simmer for 15 minutes.
  5. Season with salt and pepper.
  6. Blend if a smoother consistency is desired.
