Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix almond flour, coconut oil, erythritol, and vanilla extract.
- Press the mixture into a greased muffin tin to form the crust.
- Bake the crust for 10 minutes.
- In another bowl, blend cream cheese, strawberry puree, heavy cream, and lemon juice until smooth.
- Pour the cheesecake filling over the baked crust.
- Refrigerate for at least 2 hours before serving.
- Top with fresh strawberries if desired.
