Ingredients
1 medium cauliflower, cut into florets
2 tbsp olive oil
2 tbsp balsamic vinegar
1 tbsp honey
1 garlic clove, minced
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp dried thyme (or fresh)
1 tbsp chopped fresh parsley (for garnish)
Instructions
Preheat the oven to 425°F (220°C).
Prepare the cauliflower: Break the cauliflower into bite-sized florets. Place them in a large bowl.
Make the sauce: In a small bowl, whisk together the olive oil, balsamic vinegar, honey, minced garlic, salt, pepper, and thyme.
Toss the cauliflower: Pour the honey balsamic mixture over the cauliflower florets and toss until evenly coated.
Roast the cauliflower: Spread the cauliflower in a single layer on a baking sheet lined with parchment paper.
Bake for 25-30 minutes, flipping halfway through, until the cauliflower is tender and caramelized at the edges.
Garnish and serve: Once roasted, sprinkle with fresh parsley and serve hot!
