Homemade Shepherd’s Pie is a comforting dish made with seasoned ground beef, vegetables, and topped with creamy mashed potatoes and cheese.

- 1 tablespoon oil
- 1 pound ground beef
- 1 clove garlic, chopped
- 2 onions, finely chopped
- 2 medium carrots, finely diced
- 2 sticks celery, finely diced
- ½ teaspoon salt
- ¼ teaspoon ground paprika
- Ground black pepper to taste
- 2 tablespoons white flour
- 2 tablespoons tomato paste
- ⅓ cup red wine or more broth if avoiding alcohol
- 1 cup beef broth
- 1 cup frozen peas
- 1 tablespoon finely chopped parsley
- ½ teaspoon finely chopped thyme
- 1 teaspoon finely chopped rosemary
- 4 cups mashed potatoes
- ½ cup shredded cheddar cheese
Instructions
- Heat 1 tablespoon oil over medium high heat in a large, deep skillet. Brown 1 pound ground beef, then add garlic, onions, carrots, and celery. Sauté until softened.
- Sprinkle salt, paprika, and black pepper over the pan. Cook for 2 minutes, stirring often. Stir in tomato paste and cook until roasted.
- Pour in red wine or beef broth, scraping the browned bits off the bottom.
- Stir in beef broth, frozen peas, parsley, thyme, and rosemary. Simmer for 4-5 minutes and let cool in a baking dish.
- Make mashed potatoes. You need about 4 cups to top off the casserole.
- Preheat the oven to 400°F (200°C). Spread mashed potatoes over the filling. Criss-cross with a fork and sprinkle with cheddar cheese.
- Bake for 20 minutes or until golden. Use a lined baking sheet to catch spills.
Notes
- Replace wine with more broth if preferred.
- Swap tomato paste with ketchup if needed.
- Use any type of mashed potatoes.
- For vegetarian option, replace beef with lentils and use vegetable broth.
- For low-carb option, use mashed cauliflower.
- Swap peas for other vegetables if desired.
- Allow the pie to cool for 5-10 minutes before serving.
