Ingredients
2 3/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup unsalted butter, softened
1 1/2 cups granulated sugar
1 large egg
2 teaspoons vanilla extract
1/2 teaspoon almond extract (optional)

Instructions
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
In a large mixing bowl, cream the butter and sugar together until light and fluffy. This should take about 3-5 minutes using an electric mixer.
Add the egg, vanilla extract, and almond extract (if using), and mix until combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
Roll the dough into 1-inch balls. Gently flatten each ball with the bottom of a glass or your palm.
Decorate with sprinkles: Before baking, roll each flattened cookie in sprinkles so they stick.
Bake the cookies in the preheated oven for 8-10 minutes, or until the edges are lightly golden.
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Tips:
If you want extra chewy cookies, slightly underbake them.
