Ingredients

- 2 cups white beans, cooked
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
Instructions
- In a large pot, sauté onion, carrots, and celery until softened.
- Add garlic and cook for 1 minute.
- Stir in the cooked white beans, vegetable broth, coconut milk, thyme, and rosemary.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Blend the soup until smooth, then season with salt and pepper.
- Serve hot and enjoy.
