A deliciously easy high protein broccoli cheddar soup that is both nutritious and satisfying.
Ingredients

- 4 cups broccoli florets
- 1 cup shredded cheddar cheese
- 1 cup cooked chicken, shredded
- 4 cups chicken broth
- 1 cup milk
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent.
- Add broccoli florets and chicken broth to the pot. Bring to a boil, then reduce heat and simmer until broccoli is tender.
- Stir in the shredded chicken and milk, and cook for an additional 5 minutes.
- Remove from heat and stir in shredded cheddar cheese until melted and well combined.
- Season with salt and pepper to taste. Serve hot.
Notes
- For a vegetarian version, omit the chicken and use vegetable broth.
- Feel free to add other vegetables like carrots or cauliflower for extra nutrition.
- This soup can be stored in the refrigerator for up to 3 days.
