- 1 cup diced chicken breast
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 green onions, chopped
- 2 eggs
- Salt and pepper to taste
Instructions
- Heat sesame oil in a large pan or wok over medium-high heat.
- Add diced chicken and cook until browned.
- Add mixed vegetables and stir-fry for 3-4 minutes.
- Push the chicken and vegetables to one side of the pan.
- Crack eggs into the pan and scramble them until cooked.
- Mix the eggs with the chicken and vegetables.
- Add cooked rice and soy sauce, stirring until combined.
- Season with salt, pepper, and green onions.
- Serve hot.
