Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (28 oz) diced tomatoes
  • 1 packet taco seasoning
  • 4 cups beef broth
  • 1 cup water
  • 1 bell pepper, chopped
  • 1 cup shredded cheese (optional)
  • Chopped cilantro for garnish (optional)

Instructions

  1. In a large pot, brown the ground beef over medium heat until fully cooked.
  2. Add the chopped onion and bell pepper, cooking until softened.
  3. Stir in the taco seasoning, mixing well.
  4. Add the black beans, kidney beans, corn, diced tomatoes, beef broth, and water.
  5. Bring the mixture to a boil, then reduce heat and let simmer for 20-30 minutes.
  6. Serve hot, topped with shredded cheese and cilantro if desired.

Notes

  • For a spicier soup, add diced jalapeños or a dash of hot sauce.
